Melt the Chocolate
In a heatproof bowl, melt the dark chocolate over a double boiler or in the microwave. Stir until smooth, then let it cool slightly.

Whip the Cream
In a mixing bowl, whip the heavy cream with vanilla extract until soft peaks form. Set aside.

Beat Egg Yolks
In another bowl, whisk the egg yolks with granulated sugar until pale and creamy. Stir in the melted chocolate until well combined.

Combine Mixtures
Gently fold the whipped cream into the chocolate mixture until no streaks remain. Then, carefully fold in the beaten egg whites, a third at a time, until fully incorporated.

Chill the Mousse
Spoon the mousse into serving dishes or glasses and refrigerate for at least 2 hours, or until set.

Serve with Berries
Before serving, top the mousse with mixed berries and additional whipped cream if desired.
