Salad Preparation
1. Roast the Butternut Squash
Preheat the oven to 400°F (200°C). Peel and cube the butternut squash, then toss it in olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender and slightly caramelized.
2. Prepare the Salad Base
In a large salad bowl, combine the mixed greens and cherry tomatoes. Gently toss to mix.
3. Add Roasted Squash and Almonds
Once the butternut squash is roasted, allow it to cool slightly. Add the roasted squash and toasted almonds to the salad bowl, and toss gently.
4. Add Burrata and Dressing
Tear the burrata cheese into pieces and place it on top of the salad. Drizzle with artichoke red wine basil vinaigrette and balsamic reduction to taste.
