    Prepare the Compound Butter

    In a small saucepan, add the shallots and red wine. Simmer over medium heat until reduced by half. Remove from heat and let cool. In a bowl, mix the cooled shallot mixture with softened butter, salt, and pepper. Form into a log, wrap in plastic wrap, and refrigerate until firm.

    Prepare Vegetables

    Preheat the oven to 425°F (220°C). Toss the brussel sprouts and fingerling potatoes with olive oil, salt, black pepper, and garlic powder. Spread them on a baking sheet.

Cooking

    Roast the Vegetables

    Place the baking sheet in the preheated oven and roast for 25-30 minutes, or until the vegetables are golden brown and tender, tossing halfway through.

    Cook the Steak

    While the vegetables are roasting, season the NY Strip steak with salt and pepper. In a skillet over high heat, add a little olive oil. Once hot, add the steak and sear for 4-5 minutes on each side for medium-rare, or until desired doneness. Let the steak rest for a few minutes before slicing.

Serving

    Plate the Dish

    Slice the NY Strip steak and serve alongside the roasted brussel sprouts and fingerling potatoes. Top the steak with slices of the red wine compound butter.
