Directions

  1. 1

    Prepare the Mushrooms

Clean the Portobello mushrooms using a damp paper towel to remove any dirt. Remove the stems and scrape out the gills using a spoon for a cleaner taste.

  2. 2

    Marinate the Mushrooms

In a bowl, mix together the olive oil, salt, and black pepper. Brush this mixture over both sides of each mushroom cap. Let them marinate for about 15 minutes.

  3. 3

    Prepare for Baking

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

  4. 4

    Spread Pesto

Spread about 2 tablespoons of basil pesto evenly on the top side of each mushroom cap.

  5. 5

    Add Parmesan

Sprinkle grated Parmesan cheese generously over the pesto on each mushroom.

  6. 6

    Bake the Mushrooms

Place the mushrooms on the prepared baking sheet, pesto side up. Bake in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the cheese is melted and golden.

  7. 7

    Serve

Remove the mushrooms from the oven and let them cool for a couple of minutes. Serve warm as an appetizer or side dish.
