Preparation

    Sauté the Base Vegetables

    In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Then add diced carrots and celery, and continue to sauté for an additional 5 minutes.

    Add Garlic

    Stir in the minced garlic and cook for 1-2 minutes until fragrant.

    Add Broth and Potatoes

    Pour in the vegetable or chicken broth and add the diced potatoes. Bring the mixture to a boil.

Cooking

    Simmer the Soup

    Once boiling, reduce heat to low and add diced tomatoes, bay leaves, thyme, salt, and black pepper. Simmer for 20-25 minutes until the potatoes are tender.

    Add Greens

    Stir in the chopped spinach or kale and cook for an additional 5 minutes until wilted.

Serving

    Final Touches

    Remove bay leaves from the soup. Taste and adjust seasoning if necessary.
