    Prepare the Potatoes

    Preheat your oven to 400°F (200°C). Scrub the russet potatoes thoroughly and pierce them a few times with a fork. Bake the potatoes directly on the oven rack for about 45-60 minutes, or until they are tender when pierced with a knife.

    Scoop and Season

    Once the potatoes are cool enough to handle, cut them in half lengthwise and scoop out most of the flesh, leaving about 1/4 inch of potato on the skin. Brush the potato skins with olive oil and sprinkle with salt and black pepper.

    Bake the Skins

    Place the potato skins on a baking sheet, cut side up, and return them to the oven. Bake for an additional 10-15 minutes until they are crispy and golden.

    Add Toppings

    Remove the crispy potato skins from the oven. Sprinkle the shredded cheddar cheese and crumbled bacon generously on top of each skin. Return to the oven for another 5-10 minutes, until the cheese is melted and bubbly.

    Garnish and Serve

    Remove the potato skins from the oven and sprinkle with chopped green onions. Serve warm with sour cream or your favorite dipping sauce.
