Preparation Steps
Activate Yeast
In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
Make Dough
Add flour and salt to the yeast mixture. Mix until a dough forms. Knead on a floured surface for about 5-7 minutes until smooth.
First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.
Shape Pretzels
Preheat oven to 425°F (220°C). Punch down the dough and divide it into 8 equal pieces. Roll each piece into a long rope and shape into a pretzel.
Baking Soda Bath
In a large pot, bring 10 cups of water and the baking soda to a boil. Carefully drop each pretzel into the boiling water for about 30 seconds, then remove and place on a baking sheet.
