    Prepare the Fries

    Peel the potatoes and cut them into thick fries. Rinse them in cold water to remove excess starch, then dry thoroughly with a towel.

    Fry the Fries

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Carefully add the fries in batches, frying for about 6-8 minutes until golden brown. Remove with a slotted spoon and drain on paper towels. Sprinkle with salt to taste.

    Make the Batter

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until the batter is smooth and slightly thick.

    Prepare the Fish

    Pat the fish fillets dry with paper towels. Dip each fillet into the batter, ensuring it is well coated.

    In the same hot oil used for the fries, carefully add the battered fish fillets, frying for about 4-5 minutes until golden and crispy. Remove and drain on paper towels.
