1. Prepare the Crust

Preheat your oven to 325°F (160°C). In a bowl, combine graham cracker crumbs, 2 tablespoons of sugar, and melted unsalted butter. Mix until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan.

2. Bake the Crust

Bake the crust in the preheated oven for 10 minutes. Remove from oven and let it cool while you prepare the filling.

3. Prepare the Filling

In a large mixing bowl, beat the cream cheese until smooth. Gradually add in the granulated sugar and mix until well combined. Add the sour cream, Bailey's Irish Cream, and vanilla extract, mixing until smooth.

4. Add the Eggs

Add the eggs one at a time, mixing on low speed after each addition until just combined. Avoid overmixing.

5. Bake the Cheesecake

Pour the cheesecake filling over the cooled crust. Bake in the oven for 55-60 minutes or until the center is set but still slightly jiggly.

6. Cool and Chill

Turn off the oven, crack the oven door, and let the cheesecake cool in the oven for 1 hour. Then refrigerate for at least 4 hours, preferably overnight.

7. Serve

Once chilled, remove the cheesecake from the springform pan, slice, and serve. Enjoy your Bailey's Cheesecake!
