Preheat your oven to 350°F (175°C). Tear the stale bread into bite-sized pieces and place them in a large mixing bowl.

In a separate bowl, whisk together the milk, heavy cream, sugar, eggs, vanilla extract, ground cinnamon, and salt until well combined.

Pour the mixture over the torn bread, ensuring all pieces are soaked. Add the raisins or dried fruit and gently fold to incorporate.
