Method
Preparing the Fried Chicken
Marinate the Chicken
Cut the chicken thighs into bite-sized pieces and marinate in a mixture of soy sauce and a pinch of salt for at least 30 minutes.
Prepare the Batter
In a bowl, mix flour, cornstarch, salt, and black pepper. In another bowl, whisk the egg and water together.
Making the Gochujang Sauce
Making the Gnocchi Nuts
Prepare the Potatoes
Boil potatoes until tender. Drain and mash until smooth.
Shape and Cook
Roll dough into small pieces and shape into nuts. Boil in salted water until they float, then remove and set aside.
Cooking the Purple Rice
Cook the Rice
Rinse purple rice under cold water. Combine with water in a pot and bring to a boil. Lower heat, cover, and simmer for 30 minutes or until water is absorbed.
Preparing the Green Salad
Mix the Salad
In a bowl, toss mixed greens, cucumber, cherry tomatoes, olive oil, lemon juice, salt, and pepper together.
