Apple Gochujang Sauce

Preparation

Marinate the Beef

In a bowl, mix soy sauce, sugar, sesame oil, garlic, ginger, and black pepper. Add the sliced beef and marinate for at least 30 minutes.

Cook Barley Rice

Rinse the barley under cold water. In a pot, combine barley and water. Bring to a boil, reduce heat, cover, and simmer for about 40 minutes or until tender.

Prepare Vegetables

Sauté the carrot, zucchini, and bean sprouts in a pan over medium heat until tender. Season with a pinch of salt. Add the blanched spinach last, just to warm it through.

Make Apple Gochujang Sauce

In a small bowl, mix gochujang, grated apple, honey, and rice vinegar until well combined.

Cook the Beef

In a hot skillet over medium-high heat, cook the marinated beef for about 5-7 minutes until fully cooked.

Assembly

Assemble Bibimbap

In a bowl, place a serving of barley rice. Top with cooked beef, sautéed vegetables, kimchi, and a fried egg if desired. Drizzle with apple gochujang sauce and sprinkle with sesame seeds and green onions.
