Curry Preparation

    Sauté Aromatics

    In a large pot, heat vegetable oil over medium heat. Add chopped onion, and sauté until translucent. Add minced garlic and ginger, cooking until fragrant.

    Add Vegetables and Beans

    Stir in butternut squash, chickpeas, and black eyed beans. Cook for about 5 minutes, stirring occasionally.

    Incorporate Curry Powder

    Add Korean curry powder and stir well to coat the vegetables and beans.

    Add Coconut Milk

    Pour in the coconut milk and bring the mixture to a gentle simmer. Reduce heat and let it cook for about 15-20 minutes, or until the butternut squash is tender.

    Add Broccoli

    During the last 5 minutes of cooking, add the broccoli florets. Season with salt and pepper to taste.

    Cook purple rice according to package instructions.
