Caramel Preparation

Make the Caramel
In a medium saucepan, combine the granulated sugar and water. Stir gently to combine, then place over medium heat.

Heat the Mixture
Allow the sugar to dissolve, without stirring, until it turns a deep amber color, about 10 minutes. Keep an eye on it to prevent burning.

Pour the Caramel
Quickly pour the caramel into a round flan mold or individual ramekins, swirling to coat the bottom evenly. Set aside to harden.

Preheat Oven
Preheat your oven to 350°F (175°C).

Blend the Custard Ingredients
In a large mixing bowl, whisk together the eggs, sweetened condensed milk, evaporated milk, vanilla extract, and a pinch of salt until smooth and well combined.

Pour Custard into Mold
Carefully pour the custard mixture over the hardened caramel in the mold, filling it almost to the top.

Prepare Water Bath
Place the flan mold in a larger baking dish. Carefully add hot water to the baking dish until it reaches halfway up the sides of the flan mold.

Bake the Flan
Bake in the preheated oven for about 50-60 minutes, or until the custard is set and a knife inserted in the center comes out clean.

Cool and Chill
Remove the flan from the water bath and let it cool at room temperature for about 30 minutes. Then refrigerate for at least 4 hours, or overnight.

Serve the Flan
To serve, run a knife around the edges of the flan to loosen it, then invert onto a serving plate. The caramel will flow over the top.
