Preheat Oven
Preheat your oven to 375°F (190°C).

Prepare Filling
In a large bowl, combine shredded cooked chicken, refried beans, chopped onion, chopped bell pepper, and 1 cup of shredded cheese. Mix well until combined.

Fill Tortillas
Take a corn tortilla and dip it briefly in the enchilada sauce to soften it. Place about 1/4 cup of the filling mixture in the center of the tortilla.

Roll Tortillas
Roll the tortilla tightly around the filling and place it seam-side down in a baking dish. Repeat this process with the remaining tortillas and filling.

Add Sauce and Cheese
Once all tortillas are in the baking dish, pour the remaining enchilada sauce over the top. Sprinkle the remaining shredded cheese evenly over the sauce.

Garnish
Remove enchiladas from the oven and let them sit for a few minutes. Top with sour cream, chopped cilantro, and sliced jalapeños as desired before serving.
