Churro Dough Preparation

Prepare the Dough
In a medium saucepan over medium heat, combine the water, unsalted butter, granulated sugar, and salt. Bring the mixture to a boil.

Add Flour
Once boiling, remove from heat and quickly stir in the all-purpose flour until fully combined and a ball forms.

Incorporate Eggs
Allow the dough to cool for a few minutes, then add eggs one at a time, mixing well after each addition until smooth and glossy.

Heat the Oil
In a large, deep pot, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

Pipe the Dough
Transfer the churro dough to a piping bag fitted with a large star tip. Pipe strips of dough (about 6 inches long) into the hot oil, cutting with scissors.

Fry the Churros
Fry the churros for about 2-3 minutes on each side, or until golden brown. Use a slotted spoon to remove them and place on paper towels to drain excess oil.

Prepare Sugar Mixture
In a shallow bowl, mix together the granulated sugar and cinnamon.

While the churros are still warm, roll them in the sugar mixture until evenly coated.
