Preparation of Shrimp

    Cook the Shrimp

    In a medium pot, bring water to a boil. Add the shrimp and cook until they turn pink and opaque, about 2-3 minutes. Remove from heat and immediately transfer the shrimp to an ice bath to stop the cooking process. Drain and set aside.

Preparing Vegetables and Fruits

    Prepare the Vegetables

    While the shrimp cools, slice the avocado, mango, cucumber, and purple onion. Place them in a large mixing bowl.

Making the Chili-Lime Sauce

    Mix the Sauce

    In a separate bowl, combine the fresh lime juice, chopped cilantro, minced serrano chili, and salt. Whisk until well combined.

Combining Ingredients

    Combine Shrimp with Vegetables and Sauce

    Add the cooled shrimp to the bowl with the sliced vegetables. Pour the chili-lime sauce over the mixture and gently toss to coat all ingredients evenly.

Serving

    Serve Chilled

    Let the aguachile sit for about 15 minutes to allow the flavors to meld. Serve chilled in bowls.
