Method

Prepare Sushi Rice

    Rinse the Rice

    Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    Combine the rinsed rice and water in a rice cooker or pot. Cook according to rice cooker instructions or bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes.

    Season the Rice

    In a small saucepan, heat rice vinegar, sugar, and salt over low heat until dissolved. Once rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Let cool.

Prepare Fried Soft Shell Crab

    Prepare the Batter

    In a bowl, mix all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in cold water until smooth.

    Heat the Oil

    In a deep pan, heat vegetable oil to 350°F (175°C).

    Fry the Crab

    Dip soft shell crabs into the batter and carefully place them in the hot oil. Fry for about 3-4 minutes or until golden brown. Remove and drain on paper towels.

Assemble the Sushi Roll

    Prepare the Fillings

    Slice the avocado and cucumber into thin strips.

    Roll the Sushi

    On a bamboo sushi mat, place a nori sheet shiny side down. Spread a thin layer of sushi rice over the nori, leaving a small border at the top. Arrange fried crab, avocado, and cucumber in a line along the center of the rice. Drizzle with spicy mayo.

    Roll and Slice

    Using the mat, carefully roll the sushi away from you. Apply gentle pressure to form a tight roll. Once rolled, slice into 6-8 pieces using a sharp knife. Sprinkle with sesame seeds and serve with soy sauce.
