Preparing Sushi Rice

Rinse the Rice

Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

Cook the Rice

In a rice cooker, combine the rinsed rice and water. Cook according to the rice cooker instructions until the rice is tender and water is absorbed.

Season the Rice

In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Let it cool to room temperature.

Assembling the Roll

Prepare the Nori

Place a sheet of nori, shiny side down, on a bamboo sushi mat lined with plastic wrap.

Spread the Rice

Wet your hands with water to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch of space at the top.

Add Fillings

Place the grilled eel slices, avocado slices, julienned cucumber, and tempura shrimp in a line across the middle of the rice.

Roll the Sushi

Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure. Roll until the nori seals itself at the edge.

Cut the Roll

With a sharp, wet knife, cut the roll into 6-8 pieces. Wipe the knife between cuts for a clean slice.

Finishing Touches

Add Toppings

Arrange the additional avocado slices on top of the roll. Drizzle with eel sauce and sprinkle with masago and sesame seeds.

Serve immediately with wasabi on the side, if desired.
