Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a rice cooker or pot, combine rinsed rice and water. Cook according to rice cooker instructions or bring to a boil, then reduce heat, cover, and simmer for about 20 minutes until water is absorbed.

    Season the Rice

    In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow it to cool to room temperature.

Prepare Spicy Tuna Filling

    Prepare the Tuna

    Finely chop the sushi-grade tuna and place it in a bowl.

    Mix the Ingredients

    Add mayonnaise, Sriracha sauce, chopped green onions, and sesame oil to the tuna. Mix well to combine and set aside.

Assemble the Rolls

    Prepare the Nori

    Place a bamboo sushi mat on a clean surface. Lay one nori sheet shiny side down on the mat.

    Spread the Rice

    Wet your hands to prevent sticking, then take about 1 cup of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

    Add Filling

    Place a line of the spicy tuna mixture across the center of the rice. Add a line of julienned cucumber and sliced avocado on top of the tuna.

    Using the bamboo mat, gently roll the sushi away from you, applying light pressure to keep it tight. Roll until the nori seals at the edge.

    Using a sharp, wet knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.
