Prepare Sushi Rice

    Rinse the Rice

    Place the sushi rice in a fine-mesh sieve and rinse it under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a medium saucepan, combine the rinsed sushi rice and water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 20 minutes or until the water is absorbed.

    Season the Rice

    Once cooked, remove the rice from heat and let it sit, covered, for 10 minutes. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Fluff the rice with a fork and gently mix in the vinegar mixture. Allow the rice to cool to room temperature.

Assemble the Rolls

    Prepare Fillings

    Slice the fresh salmon fillet into thin strips and the avocado into thin slices.

    Prepare Nori Sheet

    Lay a bamboo sushi mat on a clean surface and place one nori sheet shiny side down on the mat.

    Spread the Rice

    Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch of the top edge clear.

    Place Fillings

    Arrange a few slices of salmon and avocado in a line across the center of the rice.

    Roll the Sushi

    Using the bamboo mat, carefully lift the edge of the mat closest to you and start rolling it over the fillings. Press gently but firmly to shape the roll. Continue rolling until the nori is sealed, using a little water on the edge to help it stick.

    Cut the Roll

    Using a sharp knife, slice the roll into 6-8 pieces, wiping the knife with a damp cloth between cuts to prevent sticking.

    Arrange the sushi rolls on a plate and serve with soy sauce, wasabi, and pickled ginger on the side.
