Cooking Sushi Rice

    Rinse the Rice

    Start by rinsing the sushi rice in cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a pot, combine the rinsed sushi rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for about 18-20 minutes, or until all the water is absorbed. Remove from heat and let it sit covered for another 10 minutes.

    Season the Rice

    In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Once the rice has cooled slightly, transfer it to a large bowl, and gently fold in the vinegar mixture. Allow the rice to cool to room temperature.

Preparing the Fillings

    Slice the Fillings

    Thinly slice the fresh salmon and fresh tuna into strips. Cut the avocado in half, remove the pit, and slice it into thin slices. Slice the cucumber into long, thin strips.

    Prepare Cream Cheese

    Soften the cream cheese at room temperature for easy spreading.

Rolling the Sushi

    Prepare the Rolling Station

    Place a bamboo sushi mat on a clean surface. Lay a sheet of nori, shiny side down, on the mat.

    Spread the Rice

    With wet hands, take a handful of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge.

    Add Fillings

    Place a few slices of salmon, tuna, avocado, cucumber, and a line of cream cheese across the center of the rice-covered nori.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Wet the top edge of the nori to seal the roll.

    Slice the Roll

    Using a sharp knife, slice the roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean edges.

Serving

    Arrange the sliced sushi on a serving platter. Sprinkle sesame seeds over the top.
