    Prepare the crust

    Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the crumbs are fully coated. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer.

    Bake the crust

    Bake the crust in the preheated oven for 8-10 minutes, or until lightly golden. Remove from the oven and set aside to cool.

Filling

    Prepare the filling

    In a large mixing bowl, beat the softened cream cheese until smooth using an electric mixer. Gradually add in the granulated sugar and continue to beat until well combined.

    Incorporate green tea

    Add the green tea powder, sour cream, and vanilla extract to the cream cheese mixture. Beat on low speed until fully incorporated.

    Add eggs

    Add the eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

    Pour into crust

    Pour the filling over the cooled crust in the springform pan, smoothing the top with a spatula.

    Bake the cheesecake

    Bake in the oven at 350°F (175°C) for 50-60 minutes, or until the edges are set but the center still slightly jiggles. Turn off the oven and crack the door open, allowing the cheesecake to cool gradually for about 1 hour.

    Once cooled, refrigerate the cheesecake for at least 4 hours, preferably overnight, until fully set.
