Preparing Sushi Rice

    Rinse and Cook Rice

    Rinse 2 cups of sushi rice under cold water until the water runs clear. Drain and add to a rice cooker with 2.5 cups of water. Cook according to the rice cooker's instructions.

    Season the Rice

    In a small bowl, mix together 3 tablespoons of rice vinegar, 1 tablespoon of sugar, and 1 teaspoon of salt. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture while the rice is still warm. Allow the rice to cool to room temperature.

Preparing Fillings

    Slice Avocado

    Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Slice it into thin strips.

    Slice Cucumber

    Wash the cucumber, then slice it into thin matchstick-sized strips.

    Prepare Crab

    If using imitation crab, shred it into pieces. If using real crab meat, make sure it is picked and ready to use.

Rolling the Sushi

    Prepare Your Rolling Station

    Place a bamboo sushi mat on a flat surface and lay a sheet of nori, shiny side down, on the mat.

    Spread Sushi Rice

    Wet your hands to prevent sticking and take a handful of sushi rice. Spread it evenly over the nori, leaving about 1 inch at the top edge free of rice.

    Add Fillings

    Place a few strips of crab meat, avocado, and cucumber in a line across the center of the rice-covered nori.

    Roll the Sushi

    Using the bamboo mat, start rolling the sushi away from you, applying gentle pressure to keep it tight. Roll until you reach the exposed edge of the nori. Use a little water to seal the edge.

    Slice and Serve

    Using a sharp knife, slice the roll into 6-8 pieces. Sprinkle with sesame seeds and serve with soy sauce, wasabi, and pickled ginger on the side.
