Marinate the Beef
In a bowl, combine olive oil, lemon juice, minced garlic, oregano, salt, and black pepper. Add the beef fillet mignon and coat well. Cover and marinate in the refrigerator for at least 1 hour, or overnight for better flavor.
Tzatziki Sauce

Prepare the Tzatziki
In a bowl, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, dried dill, and salt. Stir until well combined. Refrigerate until ready to serve.
Grilling and Assembly

Cook the Beef
Preheat a grill or grill pan over medium-high heat. Thread the marinated beef onto skewers and grill for about 3-4 minutes per side, or until desired doneness is achieved. Remove from grill and let rest.

Assemble the Sandwich
Cut the grilled beef into bite-sized pieces. Place pita bread or sandwich rolls on a plate. Add a layer of lettuce, followed by sliced tomatoes, red onion, and the grilled beef. Drizzle with tzatziki sauce. Top with additional lettuce and close the sandwich.
