Prepare the Chimichurri Sauce

Make the Chimichurri

In a bowl, combine fresh parsley, oregano, minced garlic, red wine vinegar, olive oil, red pepper flakes, salt, and pepper. Mix well and let it sit while you prepare the rest of the sandwich.

Cook the Steak

Cook the Strip Steak

Season the strip steak with salt and pepper. Preheat a grill or skillet over medium-high heat. Cook the steak for 4-5 minutes on each side for medium-rare, or longer for well done. Remove from heat and let rest for 5 minutes before slicing.

Prepare the Fries

Prepare Potato Wedge Fries

Preheat the oven to 425°F (220°C). Toss the potato wedges with olive oil, salt, pepper, and paprika. Spread on a baking sheet and bake for 25-30 minutes until golden and crispy.

Assemble the Sandwich

Assemble the Strip Steak Sandwich

Spread garlic aioli on the toasted Italian rolls. Layer with sliced strip steak, chimichurri sauce, and baby arugula. Top with the other half of the roll.
