1. Prepare the Ingredients
Slice the ribeye steak thinly against the grain. Slice the onion and set aside.
2. Caramelize the Onions
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions, season with salt and pepper, and cook until they are golden brown and caramelized, about 15-20 minutes. Stir occasionally to prevent burning.
3. Cook the Steak
In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high and add the sliced ribeye. Season with salt and pepper. Cook for about 3-4 minutes until browned and cooked to your liking. Mix in the caramelized onions.
4. Melt the Cheese
Place the Swiss cheese slices over the steak and onion mixture. Cover the skillet for 1-2 minutes until the cheese melts.
5. Prepare the Bread
Spread mayonnaise on the cut sides of the garlic bread. Toast the bread in a separate skillet or under a broiler until golden brown.
6. Assemble the Sandwich
On the bottom half of the toasted garlic bread, layer the steak and cheese mixture. Top with baby arugula. Place the other half of the garlic bread on top to complete the sandwich.
7. Serve
Cut the sandwich in half and serve immediately.
