Prepare the Salmon

Preheat your oven to 400°F (200°C). In a small bowl, mix together olive oil, cumin, paprika, chili powder, salt, and black pepper. Rub the spice mixture all over the salmon fillet.

Bake the Salmon

Place the seasoned salmon on a baking sheet lined with parchment paper. Bake in the preheated oven for 15-20 minutes or until the salmon flakes easily with a fork.

Make the Avocado Cream Sauce

In a blender, combine the avocado, sour cream, lime juice, and half of the cilantro. Blend until smooth and creamy. Adjust seasoning with salt if needed.

Prepare the Pico de Gallo

Dice the Roma tomatoes and red onion. In a bowl, combine them with the remaining cilantro and a pinch of salt. Mix well.

Grill the Tortillas

Heat a skillet or grill over medium-high heat. Toast the corn tortillas for about 30 seconds on each side until they are warm and slightly charred.

Assemble the Tacos

Once the salmon is cooked, flake it into bite-sized pieces. On each tortilla, layer the flaked salmon, shredded cabbage, pico de gallo, and a drizzle of avocado cream sauce. Squeeze fresh lime juice on top.

Serve the tacos immediately, garnished with extra cilantro and lime wedges on the side.
