    Chop the Vegetables

    Finely chop the tomatoes, bell peppers, and red onion. If using fresh corn, cut the kernels off the cob. If using frozen corn, thaw it before adding.

    Combine Ingredients

    In a large bowl, combine the chopped tomatoes, bell peppers, red onion, and corn. Mix well to combine all the ingredients evenly.

    Add Seasonings

    Drizzle the olive oil and lime juice over the vegetable mixture. Sprinkle salt and black pepper to taste. If using, add the chopped cilantro.

    Toss the salad gently until all the ingredients are well coated with the olive oil and lime juice mixture.
