Burger Preparation

    Prepare the Beef Patties

    In a bowl, mix the ground beef with salt and black pepper. Divide the mixture into two equal portions and form each into a patty, about 1/2 inch thick.

    Cook the Bacon

    In a skillet over medium heat, cook the bacon strips until crispy. Remove them from the skillet and place them on a paper towel to drain excess fat.

    Cook the Burger Patties

    In the same skillet, using the bacon drippings, cook the burger patties over medium-high heat for about 4-5 minutes on each side, or until they reach your desired doneness.

    Add the Cheese

    During the last minute of cooking, place a slice of Kerrygold cheddar cheese on each patty and cover the skillet to help melt the cheese.

Onion Preparation

    Caramelize the Onions

    Slice the large onion thinly. In the same skillet, add a little oil if necessary and reduce the heat to low. Cook the onions for about 15-20 minutes, stirring occasionally, until they are soft and golden brown.

Assemble the Burger

    Prepare the Toppings

    Slice the tomato and wash the lettuce leaves. Prepare the burger buns by toasting them lightly if desired.

    Build the Burger

    On the bottom half of each burger bun, place a lettuce leaf, followed by the cooked burger patty with melted cheese, a few slices of caramelized onions, crispy bacon, tomato slices, and pickles. Add mustard and ketchup to taste, then close with the top half of the bun.
