For the Irish Bread

Prepare the Oven
Preheat your oven to 350°F (175°C).

Combine Dry Ingredients
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Incorporate Butter
Cut the unsalted butter into small pieces and add it to the dry ingredients. Use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

Mix in Raisins
Fold in the raisins until they are evenly distributed throughout the flour mixture.

Add Wet Ingredients
In a separate bowl, whisk together the buttermilk and eggs. Pour this mixture into the dry ingredients and stir until just combined.

Bake the Bread
Pour the batter into a greased 9x13 inch baking dish. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool slightly before serving.

Combine Ingredients
In a medium saucepan over medium heat, combine the brown sugar, unsalted butter, and heavy cream.

Cook the Sauce
Stir continuously until the mixture comes to a gentle boil. Allow it to boil for 3-5 minutes until it thickens slightly.

Add Vanilla
Remove from heat and stir in the vanilla extract. Let cool slightly before serving.
To Serve

Plate the Dish
Cut a generous piece of the warm Irish bread and place it on a serving plate.

Drizzle the butterscotch sauce over the bread and top with a scoop of vanilla ice cream.
