Filling Preparation

    Sear the Beef

    Cut the beef chuck into 1-inch cubes. In a large pot, heat a tablespoon of oil over medium-high heat. Add the beef cubes and sear until browned on all sides, about 5-7 minutes. Remove and set aside.

    Sauté Vegetables

    In the same pot, add chopped onion, diced carrots, diced celery, and minced garlic. Sauté until the vegetables are softened, about 5 minutes.

    Add Mushrooms

    Add sliced mushrooms to the pot and cook for another 3-4 minutes until they are browned.

    Combine Ingredients

    Return the seared beef to the pot. Add Guinness stout, beef broth, Worcestershire sauce, thyme, bay leaves, salt, and black pepper. Bring to a boil.

    Simmer the Filling

    Reduce heat to low, cover, and let simmer for about 1.5 hours, stirring occasionally until the beef is tender and the sauce has thickened.

Pastry Crust Preparation

    Make the Dough

    In a large bowl, combine flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs.

    Add Water

    Gradually add cold water, one tablespoon at a time, mixing gently until the dough comes together. Do not overwork the dough.

    Chill the Dough

    Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Assemble and Bake

    Preheat Oven

    Preheat your oven to 400°F (200°C).

    Roll Out Dough

    On a floured surface, roll out the chilled dough to fit a 9-inch pie dish.

    Fill the Pie

    Pour the beef filling into the pie dish and cover with rolled out pastry. Trim excess dough and crimp the edges to seal.

    Egg Wash

    Beat the egg and brush it over the top of the pastry for a golden finish.

    Bake in the preheated oven for 30-35 minutes or until the pastry is golden brown.

Mashed Potatoes Preparation

    Cook Potatoes

    Peel and chop the potatoes into even chunks. Place them in a pot of cold, salted water and bring to a boil. Cook for 15-20 minutes until fork-tender.

    Mash Potatoes

    Drain the potatoes and return them to the pot. Add milk, butter, salt, and pepper. Mash until smooth and creamy.
