Mac's Loaded Irish Spuds

Vegetable Medley

Method

Steak Tips Preparation

  1. 1

    Marinate the Steak Tips

In a bowl, combine steak tips with olive oil and Montreal steak seasoning. Toss well to coat the steak evenly. Let marinate for at least 15 minutes.

  2. 2

    Sauté the Vegetables

While the steak is marinating, slice the bell peppers and onion into thin strips. Heat a large skillet over medium-high heat and add 1 tablespoon of olive oil. Add the sliced vegetables and sauté for 5-7 minutes until they are tender and slightly caramelized. Remove from the skillet and set aside.

  3. 3

    Cook the Steak Tips

In the same skillet, add the marinated steak tips. Cook for 3-5 minutes on each side until browned and cooked to your desired doneness. Return the sautéed vegetables to the skillet and toss with the steak tips for an additional 2 minutes.

Mac's Loaded Irish Spuds Preparation

  1. 4

    Bake the Potatoes

Preheat your oven to 400°F (200°C). Wash and poke holes in the russet potatoes. Bake for 45-60 minutes until tender.

  2. 5

    Prepare the Loaded Spuds

Once the potatoes are baked, cut them in half lengthwise. Scoop out some of the flesh and place it in a bowl. Add butter, sour cream, chopped green onions, shredded cheddar cheese, salt, and black pepper. Mash everything together until creamy and well combined. Spoon the mixture back into the potato skins.

  3. 6

    Final Touch

Return the loaded potato skins to the oven for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Vegetable Medley Preparation

  1. 7

    Prepare the Vegetables

Slice the zucchini and carrot into bite-sized pieces.

  2. 8

    Sauté the Vegetable Medley

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the zucchini and carrot, and season with salt and black pepper. Sauté for about 5-7 minutes until tender.
