Potatoes

Method

Preparation

  1. 1

    Prepare the Potatoes

Peel the russet potatoes and cut them into even-sized chunks, approximately 1.5 to 2 inches.

  2. 2

    Boil the Potatoes

Place the potato chunks in a large pot and cover with cold water. Add 1 tablespoon of salt, then bring to a boil over high heat.

  3. 3

    Cook the Potatoes

Once boiling, reduce the heat to medium and let the potatoes simmer for about 15-20 minutes, or until they are fork-tender.

Mashing

  1. 4

    Drain the Potatoes

Once the potatoes are cooked, drain them in a colander and return them to the pot.

  2. 5

    Add Butter and Cream Cheese

While the potatoes are still hot, add 4 tablespoons of unsalted butter and 4 ounces of cream cheese to the pot.

  3. 6

    Mash the Potatoes

Use a potato masher or a ricer to mash the potatoes until smooth and creamy.

  4. 7

    Incorporate Milk

Gradually add 1 cup of whole milk while continuing to mash until you've reached your desired consistency.

  5. 8

    Season the Mashed Potatoes

Add 1 teaspoon of black pepper and 1 teaspoon of garlic powder. Mix thoroughly, adding more salt to taste if needed.

  6. 9

    Garnish and Serve

Transfer the mashed potatoes to a serving bowl and garnish with chopped chives or green onions.
