Method

Preparation

  1. 1

    Slice the Onions

Thinly slice the yellow onions and set them aside.

  2. 2

    Mince the Garlic

Peel and mince the garlic cloves.

  3. 3

    Prepare the Baguette

Slice the baguette into 1-inch thick slices and set aside.

Cooking

  1. 4

    Cook the Onions

In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring frequently, for about 30-40 minutes until the onions are caramelized and golden brown.

  2. 5

    Add Garlic and Wine

Stir in the minced garlic and cook for another 2 minutes. Then, pour in the white wine and scrape the bottom of the pot to release any browned bits. Allow the wine to reduce by half.

  3. 6

    Add Broth and Herbs

Add the beef broth, bay leaves, thyme, and season with salt and pepper. Bring the mixture to a simmer and let it cook for about 20-30 minutes, allowing the flavors to meld.

  4. 7

    Toast the Baguette

While the soup is simmering, preheat the oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and toast in the oven until golden brown, about 5-7 minutes.

  5. 8

    Prepare the Cheese

Grate the Gruyère cheese and set aside.

Serving

  1. 9

    Assemble the Soup

Remove the bay leaves from the soup. Ladle the hot soup into oven-safe bowls, and place the toasted baguette slices on top of the soup.

  2. 10

    Add Cheese

Generously sprinkle the grated Gruyère cheese over the baguette slices.

  3. 11

    Broil the Soup

Place the assembled soup bowls under the broiler for about 3-5 minutes, or until the cheese is bubbly and golden brown.

  4. 12

    Serve

Carefully remove the bowls from the oven and let them cool slightly before serving. Enjoy your French Onion Soup!
