Scotch Egg Preparation

    Boil the Eggs

    Place the large eggs in a saucepan and cover with cold water. Bring to a boil over medium heat. Once boiling, reduce the heat and simmer for 8-9 minutes for hard-boiled eggs. After cooking, transfer the eggs to an ice bath to cool completely.

    Prepare the Sausage Mixture

    In a mixing bowl, combine the Irish pork sausage meat with salt, black pepper, and smoked paprika. Mix well until all spices are evenly distributed throughout the sausage meat.

    Wrap the Eggs

    Once the eggs are cooled, peel them gently. Take a portion of the sausage mixture (about 125 grams per egg) and flatten it in your hand. Place the peeled egg in the center and mold the sausage around the egg until it is completely encased. Repeat for all eggs.

    Coat the Eggs

    Set up a breading station with three shallow bowls: one with plain flour, one with beaten egg (from 1 egg), and one with breadcrumbs. Roll each sausage-wrapped egg in flour, dip in beaten egg, and then coat with breadcrumbs, pressing gently to adhere.

    Fry the Scotch Eggs

    In a deep pan, heat the olive oil over medium-high heat until it reaches 180°C (350°F). Fry the coated eggs in batches for about 4-5 minutes or until golden brown and crispy. Remove and drain on paper towels.

Honey Mustard Dip Preparation

    Mix the Dip

    In a small bowl, combine Colman's mustard, honey, and mayonnaise. Stir well until smooth and fully mixed. Adjust the sweetness or spiciness to taste, adding more honey or mustard as preferred.
