    Prepare the Breading

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Mix well to create the dry batter.

    Prepare the Wet Mixture

    In another bowl, whisk together the eggs and milk until well combined.

    Coat the Haddock

    Dip each haddock fillet first into the dry batter, ensuring it is fully coated. Then, dip it into the wet mixture, allowing any excess to drip off. Finally, return the fillet to the dry batter for a second coating.

    Heat the Oil

    In a deep frying pan or skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Fish

    Carefully place the coated haddock fillets into the hot oil, frying them in batches if necessary to avoid overcrowding. Fry for about 4-5 minutes on each side, or until golden brown and crispy. Remove and drain on paper towels.

    Prepare the Buns

    Lightly toast the buns on a skillet or in a toaster until they are golden brown.

    On the bottom half of each bun, place a lettuce leaf, followed by a fried haddock fillet. Top with a slice of tomato and a few pickle slices. Spread tartar sauce generously on the top half of the bun and place it on top to complete the sandwich.
