    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Prepare the Potatoes

    Wash the Russet potatoes thoroughly under cold water to remove any dirt. Pat them dry with a towel.

    Season the Potatoes

    Rub each potato with olive oil, ensuring they are evenly coated. Sprinkle salt and black pepper over the potatoes, distributing it evenly.

    Poke Holes

    Using a fork, poke several holes in each potato to allow steam to escape during baking.

    Bake the Potatoes

    Place the potatoes directly on the oven rack or on a baking sheet. Bake for about 45-60 minutes, or until the skins are crispy and a fork easily pierces through the flesh.

    Prepare the Toppings

    While the potatoes are baking, prepare your toppings. Chop the chives finely and set aside.

    Once the potatoes are done baking, remove them from the oven. Cut a slit down the center of each potato and gently squeeze the ends to open them up.

    Add a tablespoon of butter into each potato so it melts, followed by a generous dollop of sour cream. Top with chopped chives.
