Method

Prepare the Haddock

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Season the Haddock

    Place the 10 oz haddock filet on a baking sheet lined with parchment paper. Season both sides with 1 tsp salt, 0.5 tsp black pepper, and drizzle with 1 tbsp lemon juice.

Make the Topping

    Prepare the Cracker Crust

    In a medium bowl, melt 4 tbsp of butter. Add 1 cup of butter-flavored cracker crumbs, 0.5 tsp paprika, and 0.5 tsp garlic powder. Mix until the crumbs are well-coated with butter.

    Apply the Topping

    Spread the crumb mixture evenly over the seasoned haddock filet.

Bake the Haddock

    Bake

    Bake the haddock in the preheated oven for 20-25 minutes, or until the fish flakes easily with a fork and the topping is golden brown.

Prepare the Baked Potatoes

    Prepare the Potatoes

    While the fish is baking, wash and scrub the 2 large baking potatoes. Prick them with a fork several times and rub with 2 tbsp olive oil and 0.5 tsp salt.

    Bake the Potatoes

    Place the potatoes directly on the oven rack or on a baking sheet. Bake for 45-60 minutes, or until tender.

Prepare the Vegetable Medley

    Sauté the Vegetables

    In a large skillet, heat 1 tbsp olive oil over medium heat. Add 1 cup of broccoli florets, 1 cup of sliced carrots, and 1 cup of chopped bell pepper. Sprinkle with 0.25 tsp salt.

    Cook

    Sauté the vegetables for about 5-7 minutes, or until they are tender but still crisp.

Serve

    Plate the Dish

    Once the haddock, potatoes, and vegetables are ready, plate the dish by serving the baked haddock alongside the baked potatoes and fresh vegetable medley.
