Preparation of Seafood Filling

    Cook the Seafood

    In a large pot, add the haddock, salmon, scallops, shrimp, and clams. Pour in enough water to cover seafood, and bring to a simmer. Cook for 5-7 minutes until seafood is opaque and cooked through. Remove from heat and drain. Set aside.

Making the Herb Cream Sauce

    Prepare the Sauce

    In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until lightly golden. Gradually whisk in the heavy cream and fish stock until smooth. Bring to a gentle simmer and cook for 5 minutes, stirring frequently. Stir in the dill, parsley, salt, and black pepper. Mix in the cooked seafood and remove from heat.

Preparing the Mashed Potato Crust

    Make the Mashed Potatoes

    In a large pot, boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and return to pot. Mash the potatoes with butter, milk, salt, and black pepper until smooth and creamy.

Preparing the Pesto Crumble

    Combine Breadcrumbs and Pesto

    In a small bowl, mix breadcrumbs with pesto sauce until evenly coated.

Assembling and Baking the Pie

    Layer the Ingredients

    Preheat your oven to 180°C (350°F). In a pie dish, spread the seafood and cream sauce mixture evenly. Spoon the mashed potatoes on top, spreading to cover completely. Sprinkle the pesto crumble over the mashed potatoes.

    Place the assembled pie in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and bubbling.
