Ravioli Preparation

    Make the Pasta Dough

    In a large bowl, combine flour and salt. Make a well in the center and add the eggs. Using a fork, gradually mix the flour into the eggs until the dough starts to come together. Knead the dough on a floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Filling

    In a mixing bowl, combine the Sonoma goat cheese and chopped fresh basil. Mix until well combined. Season with salt and pepper to taste.

    Roll Out the Dough

    After the dough has rested, divide it into four pieces. Roll each piece out on a floured surface or using a pasta machine until thin, about 1/16 inch thick.

    Assemble the Ravioli

    Place a teaspoon of goat cheese filling about 2 inches apart on one sheet of rolled dough. Moisten the edges with water. Place another sheet of dough on top and press down around the filling to seal. Cut into squares or use a ravioli cutter to shape.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Add the ravioli and cook for about 3-4 minutes or until they float to the surface. Remove with a slotted spoon.
