Prepare the Chicken
Preheat the oven to 375°F (190°C). Season the chicken breasts with salt, pepper, and minced garlic. Heat 1 tablespoon of olive oil in a skillet over medium-high heat and sear the chicken for 2-3 minutes on each side until golden brown.
Roast the Tomatoes
In a baking dish, toss the cherry tomatoes with 1 tablespoon of olive oil, salt, and pepper. Place in the oven alongside the chicken and roast for about 20-25 minutes until they are blistered and soft.
Bake the Chicken
Transfer the seared chicken to the oven and bake for an additional 15-20 minutes, or until the internal temperature reaches 165°F (75°C).
Prepare the Spinach Bread Salad
In a large bowl, combine the cubed bread, fresh spinach, and olives. Drizzle with balsamic vinegar and the remaining tablespoon of olive oil. Toss well to combine.
Plate the Dish
Once the chicken is cooked, let it rest for a few minutes before slicing. Serve the sliced chicken over the spinach bread salad, topped with the roasted tomatoes. Drizzle additional balsamic vinegar if desired and garnish with fresh basil.
