Preparing the Blackened Snapper

Season and Cook Snapper

Preheat a cast-iron skillet over high heat. Pat the snapper fillets dry and rub them with olive oil and blackening seasoning. Once the skillet is hot, add the fillets and cook for 3-4 minutes per side until blackened and cooked through. Serve with lemon wedges.

Making the Corn Spoon Bread

Prepare the Spoon Bread

Preheat the oven to 400°F (200°C). In a bowl, combine cornmeal, milk, melted butter, eggs, baking powder, salt, and sugar. Fold in fresh corn kernels. Pour the mixture into a greased baking dish and bake for 25-30 minutes until set and golden.

Cooking the Swiss Chard

Sauté Swiss Chard

Heat olive oil in a pan over medium heat. Add minced garlic and sauté until fragrant. Add the chopped swiss chard, season with salt and pepper, and cook until wilted, about 5-7 minutes.

Preparing the Corn Emulsion

Blend the Corn Emulsion

In a saucepan, combine corn kernels and vegetable broth. Simmer for 10 minutes, then blend until smooth. Stir in olive oil and season with salt to taste.
