Prepare the Pork

Preheat your oven to 400°F (200°C). Season the pork tenderloin with salt, black pepper, and fresh thyme.

Sear the Pork

In a large oven-safe skillet, heat 2 tablespoons of olive oil over medium-high heat. Sear the pork tenderloin on all sides until browned (about 3-4 minutes per side).

Roast the Tomatoes

Add the cherry tomatoes to the skillet around the pork. Drizzle with 1 tablespoon of olive oil, sprinkle with salt, and toss to combine. Roast in the oven for 15 minutes.

Prepare the Fennel and Leeks

While the pork is roasting, slice the fennel bulb and leeks. After 15 minutes, add them to the skillet with the pork and tomatoes. Return to the oven and roast for an additional 20 minutes.

Make the Sherry Reduction

Remove the skillet from the oven and transfer the pork to a cutting board to rest. Place the skillet back on the stovetop over medium heat, add the sherry wine, and scrape the bottom to deglaze the pan. Simmer until the sauce reduces by half, about 5-7 minutes.

Serve the Dish

Slice the pork tenderloin and plate it with roasted tomatoes, fennel, and leeks. Drizzle the sherry reduction over the top and serve warm.
