Prepare the Bacon Jam
In a skillet over medium heat, cook the bacon until crispy. Remove the bacon and drain on paper towels, leaving the drippings in the skillet. Add the chopped onion and cook until translucent. Add minced garlic and cook for an additional minute. Chop the bacon and return it to the skillet. Stir in the apple cider vinegar and sugar, and simmer until thickened. Set aside.

Make the Garlic Aioli
In a bowl, mix the mayonnaise with minced garlic and a pinch of salt. Adjust seasoning as necessary. Set aside.

Prepare the Pickled Tomato
Slice the tomato and sprinkle with salt, then drizzle with apple cider vinegar. Let it sit for at least 10 minutes to pickle slightly.

Cook the Beef Patties
Form the ground beef into 4 slider-sized patties. Season with salt and pepper on both sides. Preheat a grill or skillet over medium-high heat and cook patties for about 3-4 minutes per side, or until they reach desired doneness. In the last minute of cooking, place a slice of Swiss cheese on each patty and cover to melt.

Assemble the Sliders
Toast the slider buns if desired. Spread garlic aioli on the bottom half of each bun. Place the beef patty with melted Swiss cheese on top, followed by a generous spoonful of bacon jam and a slice of pickled tomato. Top with the other half of the bun and serve immediately.
