Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin fries, about 1/4 inch thick.

Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Drain and Season
Remove the fries from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, sprinkle with salt.

Add Cheese and Truffle Oil
In a large bowl, toss the hot fries with Parmesan cheese and drizzle with truffle oil. Mix well to coat the fries evenly.

Serve
Serve the fries immediately with ketchup on the side for dipping.
