Preparation Steps
- 1
Prepare the Chicken
Preheat your oven to 400°F (200°C). Season the chicken breasts with salt and black pepper. In a shallow dish, combine grated Parmesan cheese and minced garlic.
- 2
Crust the Chicken
Coat each chicken breast in the Parmesan mixture, pressing down to ensure it adheres well.
- 3
Cook the Chicken
Heat olive oil in an oven-safe skillet over medium-high heat. Add the chicken breasts and sear until golden brown, about 4-5 minutes per side. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through.
- 4
Make the Dressing
In a small bowl, whisk together extra virgin olive oil, lemon juice, minced garlic, salt, and pepper to make the Parmesan garlic dressing.
- 5
Assemble the Salad
In a large bowl, combine the chopped romaine lettuce and croutons. Drizzle with the Parmesan garlic dressing and toss to coat evenly.
- 6
Serve
Slice the cooked chicken and place it on top of the dressed romaine salad. Serve immediately.
