Soup Preparation

    Caramelize the Onions

    In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are soft and caramelized, about 30-40 minutes.

    Deglaze and Add Liquids

    Once the onions are caramelized, add the dry white wine to deglaze the pot, scraping any brown bits from the bottom. Add the beef broth, brandy, thyme, bay leaf, salt, and pepper. Bring to a simmer.

    Simmer the Soup

    Let the soup simmer for about 30 minutes, allowing the flavors to meld. Remove the bay leaf before serving.

    Prepare the Baguette

    While the soup is simmering, slice the French baguette into 1-inch thick slices and toast them until golden brown.

    Serve with Cheese

    Ladle the soup into oven-safe bowls. Top each bowl with a toasted baguette slice and sprinkle the aged Swiss cheese generously on top. Place under the broiler for 2-3 minutes until the cheese is bubbly and golden.
