1. Prepare the Lamb
Season the lamb chops with salt, black pepper, and olive oil. Let them marinate for at least 30 minutes at room temperature.
2. Sear the Lamb
In a hot skillet, sear the lamb chops on both sides for about 3-4 minutes each until browned. Remove from the skillet and set aside.
3. Roast Garlic
In the same skillet, add minced garlic and fresh thyme. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.
4. Make the Jus
Deglaze the skillet with red wine, scraping up any bits from the bottom. Allow the wine to reduce by half, then add the stock and let simmer for 10 minutes.
5. Finish Cooking Lamb
Return the lamb to the skillet and cook for an additional 5-7 minutes until the desired doneness is reached. Let rest for 5 minutes before serving.
6. Serve
Serve the lamb chops with the roasted garlic thyme jus drizzled over the top.
