Chocolate Ganache
Method
Instructions
- 1
Prepare the Crust
In a medium bowl, mix together the graham cracker crumbs, cocoa powder, granulated sugar, and melted butter. Press the mixture into the bottom and up the sides of a 9-inch pie plate. Bake at 350°F (175°C) for 10 minutes. Allow to cool.
- 2
Make the Peanut Butter Mousse
In a large bowl, beat the cream cheese until smooth. Add the peanut butter and powdered sugar, mixing until well combined. In another bowl, whip the heavy cream and vanilla extract until soft peaks form. Gently fold the whipped cream into the peanut butter mixture until well incorporated. Pour the mousse into the cooled crust and smooth the top.
- 3
Prepare the Chocolate Ganache
In a small saucepan, heat the heavy cream over medium heat until just boiling. Remove from heat and add the chopped bittersweet chocolate. Let sit for 5 minutes, then stir until smooth.
- 4
Assemble the Pie
Pour the chocolate ganache over the peanut butter mousse, spreading it evenly. Refrigerate the pie for at least 4 hours, or until set. Serve chilled.
